The Kojika brewing is a company that makes the sweet potato shochu of Japan. It is drunk widely in Kagoshima Prefecture in Japan. It grows from [satsuma imo] of the raw material, and a consistent system of production is straightened from the raw material to the shochu making.The sweet potato, rice, Aspergillus oryzae, and yeast are used to make the shochu. In the sake of Japan, it is a main current to use Aspergillus oryzae. The sake making that uses Aspergillus oryzae is a technology of the wonderful tradition suitable for the climate in Japan.
