Cacio di Pienza's production is a tradition with very ancient origins passed on from one generation to the next. Milk producers came together to form the Cooperativa di Cotignano, using and keeping typical transformation methods: milk supplies, including the characteristic aromas from typical herbs from the Val d'Orcia meadows, maturing techniques and above all particular care paid to the quality of cheeses.
